Spring onion kimchi, also known as pa kimchi, is a delicious and tangy Korean side dish made from green onions (also called spring onions or scallions). It's a variation of the more commonly known napa cabbage kimchi but with a milder flavor and crisp texture.

Spring onion kimchi typically features green onions as the main ingredient. The green onions are cut into lengths and then seasoned with a spicy paste made from a mixture of Korean chili flakes (gochugaru), garlic, ginger, fish sauce or salted shrimp, sugar, and sometimes other ingredients like soy sauce or sesame seeds. The kimchi is then fermented to develop its signature tangy flavor.

green onions, Korean chili flakes (gochugaru), cloves garlic, minced, grated ginger

  1. Fermentation:

    • Place the seasoned green onions in a clean, airtight container or glass jar.
    • Press down gently to remove any air pockets.
    • Seal the container tightly and let it ferment at room temperature for 1 to 2 days, depending on your preference for fermentation level. During this time, burp the container daily to release excess gas.

  2. Storage:

    • Once fermented to your liking, store the spring onion kimchi in the refrigerator. It will continue to ferment slowly in the fridge and develop more flavor over time.

  3. Serve:

    • Enjoy your spring onion kimchi as a side dish with rice, in salads, or as a topping for various dishes.

Note: Spring onion kimchi is best consumed within a few weeks of making, but it can last for several months when properly stored in the refrigerator. Always use clean utensils when handling kimchi to prevent contamination.
