HALAL HNJ Homemade Korea Young Radish Leaf Kimchi (Yeolmu Kimchi) Fresh Korean Food 200g/400g 嫩萝卜叶泡菜

Young radish leaf kimchi, known as "yeolmu kimchi" in Korean, is a delicious and refreshing kimchi variety that's typically enjoyed during the summer months when young radish leaves are in season.

Yeolmu kimchi is made from the tender leaves of young radishes, which are slightly sweet, crisp, and refreshing. The leaves are typically harvested in late spring or early summer when they're at their peak tenderness. The kimchi is seasoned with a flavorful mixture of garlic, ginger, Korean red pepper flakes (gochugaru), fish sauce (or salted shrimp), and other seasonings, then fermented to develop its characteristic tangy and slightly spicy flavor.

Ingredients:

  • young radish leaves, Korean red pepper flakes (gochugaru), cloves garlic, minced, grated ginger, fish sauce, sugar, salt, sliced green onions
  1. Fermentation: Transfer the seasoned radish leaves into a clean, airtight container. Press down gently to remove any air pockets and ensure the leaves are tightly packed. Leave some space at the top of the container to allow for fermentation.

  2. Serve: Once the yeolmu kimchi has fermented to your liking, it's ready to serve! Enjoy it as a side dish with rice, noodles, or as a topping for salads and sandwiches.

  3. Storage: Store the yeolmu kimchi in the refrigerator in an airtight container. It will continue to ferment slowly and develop more complex flavors over time. It can typically last for several weeks to a few months when stored properly.

Yeolmu kimchi is best enjoyed chilled and freshly made, but it can also be used in various recipes, such as soups, stews, and stir-fries, to add a burst of flavor and freshness.
